How To Make Thai Fried Rice (For Beginners)

Substitutions:
You can use shrimp or extra eggs instead of chicken.
You can use basmati rice if you don’t have jasmine.
You can use vegetable oil if you don’t have grapeseed oil.
If you can’t find Thai basil, then you can use sweet basil.
Tips:
Let your wok or pan get really hot, and let your oil heat up as well.
Don’t overcrowd your wok. This recipe yields yields to 2 servings. If you need to make more servings, just fry 2 servings at a time.
Tap your chicken with paper towel to remove excess moisture.
Rinse your jasmine rice twice (or until the water is clear) before cooking it.
Using a day old or a two day old rice is better. However, if you need to make fried rice right away, you can let your rice completely cool off in room temperature, then you can store it in the freezer uncovered for about 20 minutes.
Ingredients:
2 tbsp of grapeseed oil (or vegetable oil)
1 medium chicken breast cut in cubes
1 small onion chopped
2 cups of cooked jasmine rice (1 cup dry)
2 tbsp soy sauce
1 tbsp oyster sauce
1 tsp fish sauce (it’s ok if you don’t have it)
1 tbsp minced garlic
A few Thai basil leaves
1 egg lightly beaten
Thai chili peppers (for garnish)
Rice Preparation
Rince the jasmine rice twice to remove the excess starch.
Add 1.5 cups of water to 1 cup of jasmine rice.
Set the heat to medium. Once boiling, reduce the heat to lowest.
Let it cook for about 20 minutes or until the rice absorbed all the water.
Once cooked, let it completely cool off in room temperature uncovered.
Store the rice pot in the fridge covered for 1-2 days prior to making fried rice.
If you need to make fried rice right away, store it in the freezer uncovered for about 20 minutes.
Fried Rice Sauce Mixture:
Combine 2 tbsp of soy sauce, 1 tbsp of oyster sauce and 1 tsp of fish sauce in a bowl and mix well.
Fried Rice Preparation:
Add 2 tbsp of oil to your wok and let it heat up.
Add the chicken and fry for 30 seconds.
Add 1 tbsp of minced garlic and fry for an additional 30 seconds.
Add the onions and fry for 2 minutes or until the onions are tender.
Add the cooked jasmine rice and fry for 30 seconds.
Push the rice to the side. Add the beaten egg on the opposite side and fry for an additional 30 seconds.
Add the fried rice sauce mixture and fry for 1 minute.
Remove fried rice from heat and then add Thai basil leaves.
Mix the basil leaves until they soften.
Garnish with the spicy sauce mixture and serve. Et voilà!
